Quantity :
Clear, amber-colored to light brown viscous liquid with a characteristic lecithin odor and no abnormal smell. Premium products are described as"bland odor and flavor". Emulsification: Creates stable oil-in-water or water-in-oil emulsions in margarine, sauces, and dressings, preventing phase separation during storage. Dispersion: Ensures uniform distribution of powders and solids throughout liquid media, facilitating instantization of dry beverage mixes. Viscosity Reduction: Reduces friction between solid particles dispersed in liquids, dramatically lowering system viscosity to enable flow through processing equipment and enhance final product texture. A classic example occurs in chocolate production, where lecithin reduces friction between cocoa particles suspended in cocoa butter, dramatically lowering the mixture's viscosity. Wetting Enhancement: Significantly improves the wetting properties of powders, allowing them to be incorporated into liquids without clumping. Stabilization: Extends product shelf life by slowing crystallization, preventing fat bloom in confectionery products, and inhibiting oxidative rancidity through its natural antioxidant activity. It delays crystal formation and growth in fatty products, ensuring uniform texture and appearance.

Leathers : during fat liquoring step, aids fat penetration of leather; reduces the darkening effect of sunlight on leather; reduces the leather's softening time and improves the shining of leather.

Paints: intensifies color. Also acts as releasing agent for ready remove of wooden, metal and concrete casting form.
